Designing an effective layout for your commercial kitchen is one of the most important steps you can take to ensure that your food service operation remains at peak performance for years to come. Here are some common kitchen designs as starting points for building your perfect restaurant kitchen: Center Island A center island kitchen is a classic arrangement where its center is occupied by a large island, usually designated for cooking. Around this are counters and other workstations for storage, food preparation, plating and other tasks. Its open nature enables head chefs to easily keep an eye on all kitchen activities while also giving instructions to staff so they can work together easily. All this makes such settings excellent choices for high-end table service restaurants that require the head chef to maintain supervision and control over each meal. Assembly Line An assembly line ensures that all dishes follow the same path during preparation. Perfectly suited to producing large quantities of similar meals over a very short period of time, assembly line kitchens are very much at home in settings such as quick service restaurants and cafeterias. This is also a good choice for kitchen staff with a limited skill set, as an assembly line typically requires only a narrow set of repetitive tasks to pass the dish to the next successive station. Open Kitchen An open kitchen is exactly what it sounds like, and could incorporate other features on this list, but its defining quality is that it is open to the Front of the House for your customers to see. The Size and Shape of Your Kitchen Some sizes and shapes of commercial kitchens are not appropriate for all common arrangements. For example, it can be difficult to arrange a center island in a narrow kitchen. You’re making an important decision, so you may not want to abandon your vision entirely, but understanding the limitations of your current space may help you decide if more extensive renovations are needed. Staff Requirements Certain kitchen arrangements work best with certain types of staff – that includes you and your head chef! If your chef needs to keep a close eye on the dishes as they take shape, a center island is probably the best choice, but if you expect your staff to work very long shifts, it might be ergonomic design is the way to go.
